1) Preheat oven to 400 degrees. Lightly coat a mini muffin pan with cooking spray. Set aside.
2) Combine milk, butter and salt in a saucepan. Heat over medium low heat until butter is melted, stirring occasionally. Remove from heat. Whisk in flour, cheese and parsley. Whisk in eggs, one at a time, until mixture is smooth.
3) Fill each muffin cup with 2 tbl. batter.
4) Bake for 15-20 minutes or until golden brown. Serve immediately.
